That a girl goes through…

Today has been kind of blah for me.  I strained my neck and back last night backing out of a driveway and due to my current injuries from my car accident it hurt like hell!  I didn’t go in to the office this morning because I couldn’t move and then had a nice relaxing physio session.  My Dr told me that I added to my injuries and that I better get my butt into bed and rest so back home I went.  I put on my pj’s and some music and got into bed to work.  Harley is the best when I’m home sick.  He just cuddles right up and purrs away.

I have a crappy feeling that I’m letting people down and that some people are disappointed in me today.  It’s one of my insecurities and I hate it when it creeps its way in.  Sometimes you just can’t help it though.  Not everyone is going to like you or what you do every day and you’ve just got to turn that negativity around into something positive.  I think that it just makes me work harder to prove to myself that I’m doing the best I can.

Got invited to go to a Raptor’s game tonight and sit in the 2nd row behind the net.  What a day to be stuck in bed!  I love basketball and have only gone to 1 NBA game in my life.  I wish I could’ve gone tonight but c’est la vie.

I’ve got a secret cheer up weapon in my arsenal today though.  Tonight is the night that I finally get to watch Breaking Dawn Part One.  I’m really excited to see what the film looks like and yes I’m a nerd but I don’t care.

Tonight is also the second Boy vs Girl night at Supermarket pitting Robyn Dell’Unto against Morgan Cameron Ross – tonight it’s Robyn’s turn to shine while Morgan heckles her from the crowd.  If you haven’t seen these two perform yet you should get your butt down there to see them.  I’ve been a fan of Robyn since her CD release party last year and she has a gorgeous voice with great songs.

Monday Munchies – Butternut Squash Soup

This is one of my all-time favourite soups to make.  I think it might even be my signature soup!  It’s pretty easy to make and doesn’t take too long.  The hardest part for me is to peel the squash.  Enjoy.

 BUTTERNUT SQUASH SOUP

INGREDIENTS

1 butternut squash – peeled, seeded & cubed

2 vegetable bouillon cubes

salt, pepper, rosemary, thyme, cumin and basil to taste

2 tablespoons butter

2 tablespoons sour cream

DIRECTIONS

  1. Peel and remove seeds from squash.  Cut into equal sized cubes and cover with water.
  2. Bring to a rolling boil and add 1 tbsp butter and your first round of spices.
  3. Boil until squash is soft then turn heat down to minimum and add vegetable bouillon cubes.
  4. Using a slotted spoon take squash from pot and put into blender and puree.  **NOTE use oven mitts or a towel to hold the blender lid because the squash mixture is HOT!**
  5. Once squash is pureed, add it back into the pot of water and turn heat to medium.
  6. Add the rest of the butter, sour cream and spices to taste.
  7. Simmer for 20-30 minutes or until mixture thickens.
  8. Add a dollop of sourcream (or try cottage cheese) and serve

Sunday Funday

This morning started off a little stressful but ended up turning into a nice evening.  After we sorted everything out and finished running around I came home and decided to clean and start cooking.  I absolutely LOVE cooking and making things from scratch.  I don’t do it enough and I’m going to make a big effort to cook more this year.  I made an amazing butternut squash soup and banana oat muffins.  I’ll post them tomorrow and if you like butternut squash you’ve got to try out my new recipe.

I finally found a nice place to move into after months of looking and applying and being disappointed.  It’s so hard to find a good apartment lately and we’ve seen some disgusting and beautiful places.  I’m sticking to my East End hood, which I love, and getting a nice main floor place with a working fireplace, backyard and huge kitchen!  I have been dreaming of wine and relaxing by the fireplace since I signed the lease.  Perfect for Canadian winters.

I’m really excited for 2012.  The past two years have been very challenging and thankfully things have started to feel a little more balanced.  I can’t wait to move into our new place and decorate.  I’ve decided to get rid of as much as I can and start fresh.  New year, new girl, new life :)

I was hacked

Beacause I didn’t upload to the new WordPress version in time.

There is still a lot of work to be done to fix this site so unfortunately I won’t be posting anything new for a bit.

Right now I am typing blindly with white text on a white background and it is ridiculously hard.

Thanks for Michael @ BlogStudio for the first fix and Michael at 26Mondays for the 2nd fix. You guys saved my life over the holidays.

I’ll be back as soon as I get everything up and running again.

Show & Tell: Nov 25/11

Last night I cooked an American Thanksgiving dinner for my man, my parents and my brother and sister.  I hadn’t cooked at Turkey in forever and they all said it turned out amazing!  I’ll post my yummy recipes on Monday and you should definitely try them out.  Today is going to be another crazy busy day and then it is Jason’s last weekend in Canada before he goes back to FMB.  I’m going to miss him so much I can’t even stand it, but c’est la vie.  He’ll be back in April.  Today’s Show & Tell is short and sweet cause I’ve got to get my butt to the office!

Happy Thanksgiving America

Today is Thanksgiving in the US and I’m making a nice dinner for my American man.  Mom, Dad, Kristin and Kyle are all coming over to my tiny apartment for Turkey and all the trimmings.  I’ll post recipes and photos of my spread and I think it’s important (and maybe a little scary) to note that I have not cooked a Thanksgiving turkey in at least 10 years!!!

Happy Thanksgiving to all my American friends and family and I’ll be having dinner on the beach next year.

I lost a bunch of posts

I lost a bunch of posts from the very beginning of my blog, I think they were even imported from my first blogger site.  When I made the switch from kaponetwo some of the posts just disappeared and I couldn’t figure out what to do.  It’s probably been too long to figure out but maybe one day I will.  My blog feels really bare lately and its frustrating.  I’ve got lots to do and say but not enough time to write it all down.  I guess that’s a good thing though.  I’m too busy to sit down and write.  There’s always so much going on.  I made the best butternut squash soup ever last night for dinner.  Jason loved it and he said some pretty ridiculous things that I’m not going to post.  haha.

We’re going back to Florida soon and I cannot wait to go on a road trip.  I’m only going for a week this time and Jason for the winter so that kinda sucks that I have to fly home without him.  I need to move and get a bigger place soon.  I’m looking in the Beach/Leslieville area so if you hear of anything let me know!

Life has been busy and really great lately.  Hope it’s been the same for you.

Once Upon A Time

Yesterday I stayed in bed most of the day watching TV.  I’m still sore from my accident and it was so nice to relax with Harley and do nothing.  I caught up on Season 2 of The Vampire Diaries and then watched the first four episodes of Once Upon A Time.

I had been saving the pilot episode to watch for a while and it is such a great show that I had to watch the next three episodes!  Once Upon A Time is about what happens to all our favourite FairyTale characters when Snow White’s Evil Queen releases a powerful curse the day she and Prince Charming’s child is born and they end up trapped in our world, with no recollection of who they are in a town called Storybrook, Maine.  These are not the Disney variety of fairytales and shows has a darker, dramatic side to it.  The show was created by two of the writers from Lost and I can’t wait to see how the story unfolds. This could be my new favourite series!

And they all lived happily ever after – or so everyone was led to believe. Emma Swan knows how to take care of herself. She’s a 28-year-old bail bonds collector who’s been on her own ever since she was abandoned as a baby. But when the son she gave up years ago finds her, everything starts to change. Henry is now 10 years old and in desperate need of Emma’s help.

He believes that Emma actually comes from an alternate world and is Snow White and Prince Charming’s missing daughter. According to his book of fairytales, they sent her away to protect her from the Evil Queen’s curse, which trapped the fairytale world forever, frozen in time, and brought them into our modern world. Of course Emma doesn’t believe a word, but when she brings Henry back to Storybrooke, she finds herself drawn to this unusual boy and his strange New England town. Concerned for Henry, she decides to stay for a while, but she soon suspects that Storybrooke is more than it seems.

It’s a place where magic has been forgotten, but is still powerfully close… where fairytale characters are alive, even though they don’t remember who they once were.

The epic battle for the future of all worlds is beginning, but for good to win, Emma will have to accept her destiny and fight like hell.

Show & Tell: Nov 18/11

Another crazy busy week for me. I got the most amazing package from our friend Vivi last night full of Fairlie Dolls and yummy treats.  I’ll post what she made us over the weekend and prepare to be amazed.  I’m really enjoying work and have been doing so much planning and organizing it’s ridiculous :)   Two more weeks until Jason and I go to Florida – I’ll be back in a week though and he’s got to stay for the winter to work :(    Things are slow on the blog front but here’s a great Show & Tell for this week.
