Leftovers: Quick and Easy Collard Polenta Spaghetti

I made this delicious dish, Braised Collard Greens on Polenta, on Monday night and on Tuesday ate the leftovers.  This is a pretty big deal because I’m not really a leftover eating kind of girl, but I’m trying to change my ways.

Quick and Easy Collard Polenta Spaghetti


  • left over Braised Collard Greens on Polenta
  • spaghetti sauce
  • 1 tbsp butter
  • parmesan cheese


  1. Melt butter in a bot and add leftover collards & polenta.
  2. Mash together and heat on medium for about 5 minutes.
  3. Serve with a topping of spaghetti sauce & parmesan cheese.
